Weekend Kitchen Show on BBC 3 Counties

On Saturday I went onto the Weekend Kitchen Show on BBC 3 Counties Radio with the funny and animated Nick Coffer. For two hours two other guests, Nick and I talked about all sorts of foodie things. I talked mostly about food intolerances, in particular to egg, dairy and gluten on the show and produced a three course meal that was free of all of these food. As someone who suffers from dairy and egg intolerance I am all too familiar with the emotion of ‘missing’ certain foods and especially certain textures. The cashew sour cream was a particular hit. It tastes amazing and works everywhere you’d use ‘normal’ sour cream and yet it is so much better for you. What a win, win! Here’s the recipe.
Ingredients:
1 bunch chives
120g raw cashews
1 cup water (check)
1 tsp salt
1 clove garlic
½ onion
Juice 1 lemon
Method:
Chop chives. Place all other ingredients into a food processor and pulverise. Pop the ingredients into a saucepan and heat very gently for 5 minutes. Add the chopped chives. Serve.
